Easy and Healthy Summer Peach Popsicle Recipe
If there’s one thing the popsicle craze sweeping the nation has taught us, it’s that we can all master the art of making (and enjoying) popsicles with the right ingredients.
Luisa Hammett, a registered dietician and the lifestyle blogger behind Peaches to Pearls, offers a “better option for a summertime treat” with her Summer Peach Popsicle recipe. You can feel good about the fact that it’s packed with vitamin C, fiber and protein, thanks to the peaches and creamy Greek yogurt base.
And perhaps even more incentive than the nutrition itself – you can easily let your kids join in on the fun! Let them choose their own mix-in ingredients like strawberries, watermelon and mint leaves and encourage them to write their name on the popsicle stick.
With only 3 main ingredients, it may be your easiest summer recipe hack, with one small catch: you’ll need to mix in a little patience while you wait for them to freeze and enjoy.
- Ingredients
-
• 1 cup sliced peaches
• 1 cup vanilla Greek yogurt
• 1 cup Chick-fil-A Lemonade
• Optional mix-ins: Mint leaves, strawberries, watermelon, chia seeds
Requires a popsicle mold and blender. Remember to always wash your hands before cooking!
- Directions
-
- Rinse the peaches. Roughly slice the peaches and leave skin on.
- Add the peaches, yogurt and lemonade into the blender. Blend for 20 seconds or until the mixture is completely smooth.
- Either leave the mixture as-is or add watermelon, strawberries, mint, chia seeds or any other ingredient of choice to add more flavor and color.
- Pour the mixture into a popsicle mold.
- Add popsicle sticks – they will stay in place due to the thicker mixture.
- Leave the popsicles in the freezer for at least six hours or overnight.
- Rinse the peaches. Roughly slice the peaches and leave skin on.
