Steps
- In a medium skillet over medium heat, melt the butter.
- Add the eggs and scramble, stirring often. Set aside.
- Wipe out the skillet and heat sesame and canola oil briefly.
- Add green onion, rice and soy sauce. Mix and cook for 5 minutes.
- Add chicken, carrots, peas and scrambled eggs; continue to cook 5 minutes.
- Serve immediately with additional soy sauce, if desired.
