Spicy Queso and Eggs

Plate of breakfast with scrambled eggs, avocado, cheese, chicken and hash browns, beside a cup of coffee.
  1. Heat a medium non-stick skillet over medium low.
  2. Add chicken and red pepper flakes (to taste) and cook until chicken begins to sizzle and release some oil, approximately 5 minutes.
  3. Pour in eggs and stir briefly.
  4. Just before the eggs are fully cooked (no liquid remains), fold in cheese and allow to heat through.
  5. Remove from heat, drizzle with sauce and serve immediately.
