Steps
- Preheat oven to 350°F. Spray a 10” x 12” baking dish with non-stick spray.
- In a medium bowl, combine diced chicken and 1 cup of enchilada sauce.
- On a tortilla, spread a spoonful of chicken and sprinkle with 2 tbsp of cheese. Roll tortilla up and place seam-side down in the dish. Repeat with remaining 11 tortillas.
- Top with remaining 1 cup sauce and ½ cup shredded cheese.
- Bake 30 minutes uncovered. Serve hot.
