Steps
- Preheat oven to 375°F. Line 2 sheet pans with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
- In a stand mixer or large bowl with electric hand mixer at medium speed, cream together the butter and sugar until smooth. Beat in the egg and vanilla extract until just combined.
- On a low speed, slowly beat in the flour mixture until fully combined. Dough will come together and should not be sticky.
- Roll out 1-inch balls of dough and lightly press down in a 3×3 configuration on a sheet pan to flatten. Repeat on the second sheet pan.
- Bake cookies at 375°F for ~10 minutes, or until just lightly browned around the edges. You will want soft cookies for these treats, as the cookie will harden in the freezer. Transfer cookies to a cooling rack, cool completely.
- If you have any dough leftover, bake as directed and enjoy a little treat!
- Using tin foil, create a ring mold roughly the same size of the cookies. Alternatively, use a biscuit cutter, cookie cutter, or ramekin lined in plastic wrap around the same size. On a clean sheet tray, place molds. Pour in frozen milkshakes until about halfway up the molds. One milkshake should be able to fill three molds. Carefully place in the freezer to completely solidify (at least 4 hours, or overnight). Enjoy any remaining milkshake – you earned it!
- Remove the frozen molds from the freezer. Using scissors, make a slit in the side of one of the foil or if using ramekins, lift frozen patties out and remove plastic wrap. Discard any foil or plastic wrap.
- Take 2 sugar cookies and sandwich the Peach patty between them. Repeat for the remaining 8 patties.
- Serve Immediately. Freeze any leftovers.
