  1. Heat 1 tablespoon butter in a non-stick pan over medium heat.
  2. Add the eggs and scramble until fully cooked, about 2–3 minutes. Transfer the scrambled eggs to a plate and set aside.
  3. Wipe the pan clean. Add the remaining butter and melt over medium heat.
  4. Add the onion and peppers. Sauté for 5 minutes, or until softened.
