Steps
- Heat 1 tbsp butter over medium heat in a non-stick pan. Scramble eggs and set aside.
- Wipe pan clean and add remaining butter. Sauté onion and peppers for 5 minutes or until softened.
- Add hash browns and sausage; sauté 5 minutes.
- Add tomatoes and scrambled eggs, stir and cook 3 minutes.
- Remove from heat and stir in shredded cheese.
- Season with salt and pepper to taste and serve with warm rolls or tortillas.
