SPOKANE, Wash. (Oct. 1, 2026) – A new Chick-fil-A® restaurant will begin serving Guests in Spokane on Thursday, Oct. 8 at 6:30 a.m., with Chick-fil-A, Inc. selecting Lizzie Minkner to serve as its local Owner-Operator.

Located at 104 E Mission Ave, Chick-fil-A Ruby & Sinto will serve Guests Monday through Saturday from 6:30 a.m. to 11 p.m., offering dine-in, drive-thru, carry-out, delivery, catering and Mobile Thru. The restaurant marks Chick-fil-A’s second restaurant in Spokane, bringing the brand’s signature hospitality and approximately 120 new jobs to the community.

To celebrate, Guests are invited to join the fun by dressing in cow print on opening day to receive a free entrée.

Locally Owned and Operated
“Working in Spokane for the past two years, I’ve seen firsthand how deeply people here care for and support one another, and I knew this was a community I wanted to call home,” said Minkner. “My journey from Team Member to local Owner-Operator showed me the difference it can make when someone believes in your potential and invests in your growth. Now, I’m excited to pay that forward by creating opportunities for my Team Members to build skills, grow as leaders and pursue their own dreams.”

More About Lizzie

  • Lizzie’s Chick-fil-A journey began as a Team Member in Scottsdale, AZ, where she quickly discovered a passion for the brand and set her sights on one day becoming a local
Owner-Operator. After gaining experience outside of Chick-fil-A, she returned to the brand with a renewed appreciation for its people-first culture and opportunities for career growth.
  • Moving to North Idaho and later Spokane to work at the city’s first Chick-fil-A restaurant introduced Lizzie to the strong sense of connection that defines the community. Her experience in Spokane ultimately inspired her to plant roots and pursue the opportunity to become a local Owner-Operator, building a restaurant that serves as an active part of the community she now calls home.

Opening Day Moove-In Party at Chick-fil-A Ruby & Sinto
To celebrate the restaurant moo-ving into town, Minkner and her team are inviting the community to show off their cow spots on opening day for a free entrée.

  • Since 1995, the Cows have been a beloved part of Chick-fil-A, encouraging humans to skip burgers and “Eat More Chikin” – and now it’s Spokane’s turn to join the herd.
  • Guests dressed in cow print – whether it’s a full cow costume or a simple cow-spotted accessory – can enjoy one free entrée or kid’s meal* in person inside the restaurant or in the drive-thru.

Caring for the Spokane Community
Minkner is committed to giving back to the Spokane community by:

  • Providing a $25,000 donation from Chick-fil-A, Inc. to Feeding America to support the local hunger relief efforts of Second Harvest Inland Northwest, a Feeding America partner food bank, in honor of the new restaurant.
  • Participating in the Chick-fil-A Shared Table® program, which redirects surplus food to local nonprofits. The program has helped to create over 42 million meals nationwide to date.
  • Fostering an environment where Team Members have the freedom to learn and grow, with the patience and support they need to create positive, generational change for themselves and those around them. This includes opportunities to pursue continued education through Chick-fil-A Remarkable Futures™ Scholarships, as well as access to tuition discounts at more than 100 colleges and universities nationwide.
