Steps
- Preheat oven to 350°F. Spray a 2-quart baking dish with non-stick spray.
- Heat oil in a sauté pan over medium heat. Add diced onions and peppers and cook until softened, 5-7 minutes.
- In a large bowl, combine mac & cheese, diced nuggets, onion powder, garlic powder, ground cumin, can of tomatoes (do not drain), chicken broth, and 1 cup of the shredded cheese.
- Once onions and peppers are cooked, add to bowl and mix thoroughly.
- Pour mixture into baking dish. Top with remaining cheese and cover lightly with aluminum foil. Bake for 30 minutes.
- After 30 minutes, remove foil and continue baking for 15 minutes. Remove from oven and let rest 15 minutes before serving.
