Preheat oven to 350°F. Spray a 2-quart baking dish with non-stick spray.
Heat oil in a sauté pan over medium heat. Add diced onions and peppers and cook until softened, 5-7 minutes.
In a large bowl, combine mac & cheese, diced nuggets, onion powder, garlic powder, ground cumin, can of tomatoes (do not drain), chicken broth, and 1 cup of the shredded cheese.
Once onions and peppers are cooked, add to bowl and mix thoroughly.
Pour mixture into baking dish. Top with remaining cheese and cover lightly with aluminum foil. Bake for 30 minutes.
After 30 minutes, remove foil and continue baking for 15 minutes. Remove from oven and let rest 15 minutes before serving.
